Ingredients
200g white mushrooms, sliced
200g onion, chopped
2 Celery stalks, chopped
10ml (2 tsp) Italian herb seasoning
5ml (1 tsp) chilli powder
5ml (1 tsp) ground coriander
5ml (1 tsp) garlic, crushed
5ml (1 tsp) ground cumin
350ml Water
400g Canned diced tomatoes, undrained
400g Canned black beans, drained and rinsed
400g Brown rice, cooked
Instructions Heat 15ml water in a soup pot over medium-high heat. When the water starts to sputter, add the mushrooms, onions, and celery, and cook while stirring for 4 to 5 minutes, adding a little more water as needed. Add the Italian seasoning, chili powder, coriander, garlic, and cumin and cook while stirring for 1 minute, adding water as needed. Stir in the 350ml water, diced tomatoes, beans and rice, and bring to a boil, uncovered. Reduce the heat to medium-low, then cover and cook for 10 - 15 minutes, stirring occasionally.
