Instructions
Heat 15ml water in a soup pot over medium-high heat. When the water starts to sputter, add the mushrooms, onions, and celery, and cook while stirring for 4 to 5 minutes, adding a little more water as needed. Add the Italian seasoning, chili powder, coriander, garlic, and cumin and cook while stirring for 1 minute, adding water as needed. Stir in the 350ml water, diced tomatoes, beans and rice, and bring to a boil, uncovered. Reduce the heat to medium-low, then cover and cook for 10 - 15 minutes, stirring occasionally.
