Ingredients
- 40ml (2½ tbsp) low-fat margarine
- 1 large onion, cubed
- 1 large green pepper, cubed
- 200g button mushrooms, sliced
- 400g chicken fillets, cut into strips
- 30g flour
- 500ml low-fat unsweetened evaporated milk
- 2ml paprika
- Salt and black pepper
- 300g ribbon pasta, cooked weight
Instructions
Heat the margarine in a non-stick saucepan. Add the onion, green peppers and mushrooms, and sauté for 5 minutes. Add the chicken and sauté until cooked. Stir in the flour and mix to combine. Add the milk and simmer until it thickens. Season with paprika, salt and black pepper. Serve the chicken over cooked pasta.
