Ingredients
60ml (4 tbsp) low-fat milk
50ml (3 tbsp + 1 tsp) crunchy peanut butter
15ml (1 tbsp) oil
4 chicken fillets, cut into strips (100g each)
salt
1 green pepper, cut into strips
Instructions: Heat the milk until warm and add the peanut butter. Whisk until well combined. Sprinkle the chicken strips lightly with salt. Heat the oil in a frying pan and fry the strips until almost done. Add half of the peanut butter sauce and simmer for 5 minutes or until the sauce reduces slightly in volume. Add the green pepper to the chicken and cook for about 2 minutes. Stir in the res the peanut sauce and cook for 6 minutes or until the sauce starts to bubble. Serve cooked rice for supper from your daily allowance.
