Ingredients
400g chicken fillets, cut into cubes
1 green pepper, chopped
360g potatoes
5ml (1tsp) crushed ginger and garlic
1 large onion, finely chopped
20ml (1 ½ tbsp) oil
20g cake flour
10ml (2 tsp) low fat margarine
250ml fat free milk
Salt and pepper
Instructions:
Heat the oil in a saucepan, add the onion, pepper, ginger, garlic and sauté until onions are translucent.
Add the chicken and stir fry until chicken is cooked. Set aside.
Set aside. Heat the margarine, add the flour and mix to form a smooth paste.
Gradually add the milk and heat to form a smooth sauce. Add the sauce to the chicken mixture.
Season with salt and pepper. Simmer gently until the mixture has thickened.
Boil the potatoes in lightly-salted water. Drain and slice into rounds.
Spoon the chicken mixture into an ovenproof dish.
Top with potato and bake in a preheated oven at 180℃ (350℉, Gas Mark 4) until the potato is golden brown.
