Ingredients
FOR THE OATS
½ cup (40g) Rolled oats
½ cup (125ml) Low fat milk
½ cup (125ml) Water
Pinch salt
FOR THE TOPPINGS
2 eggs (softly poached/ boiled)
200g Baby spinach
2 tsp (10ml) Olive oil
Salt and pepper
Instructions:Method
Heat the olive oil in a large skillet over medium-high
heat. Add the minced garlic and sauté for 30 seconds.
Add the baby spinach and stir to coat in garlic and oil
mix. Cover and allow to steam, stirring occasionally
until wilted (5 minutes). Meantime, make the oats and
poach an egg according to personal preferences. Once
oats is cooked, spoon into bowls, top with 1 poached
egg and steamed spinach. Flavour with salt, pepper
and spices and serve immediately.
