In a bowl, combine onion, salt, mustard and lemon juice. Place the potatoes in a pot of boiling water. Cover and cook until cooked through (about for 12 minutes). Drain and allow to cool. Cut potatoes into 2cm rounds. Whisk oil into onion mixture. Add the potatoes and toss to coat. Add the fish and parsley, and stir to combine. Serve hot or cold on a bed of lettuce
