Chicken, Spinach and Feta Burger

Ingredients
- 200g baby spinach
- 5 cloves garlic
- 30ml (2 tbsp) olive oil
- 450g lean chicken mince
- 20ml (4 tsp) water
- 90g reduced fat feta cheese
- 5ml (1 tsp) Dijon mustard
- Salt and pepper
Instructions:
Place the garlic cloves on a baking tray and drizzle with half the olive oil. Roast in a 190
℃ oven for 10 minutes, remove from heat, peel, and mince.
Place the spinach leaves and water in a pot with a tight fitting lid and steam on a low heat until spinach has wilted, drain and squeeze out excess liquid, finely chop and set aside to cool.
Mix together the cooled spinach and garlic with all remaining ingredients, except for the left over oil. Form into 4 even sized patties, place on a baking tray and leave to chill in the freezer for 20 minutes.
Heat remaining oil in a large, non-stick pan and gently place the patties in the hot oil. Leave to cook for five minutes before turning. Cook for an additional 10 minutes, or until cooked through. Serve with burger buns and your favourite toppings from your daily serves.
